Moreover, Rossignoli initially trained in advertising but switched careers to dedicate himself entirely to gastronomy, with a focus on the Cerrado. He strongly believes in sustainability, social inclusion, and cultural revival through the kitchen, which has made him a reference in this field. 
In 2021, he was awarded the Dólman Prize, known as the “Oscar of Brazilian Gastronomy.” highlighting his impact on the Brazilian culinary scene.
 
Rossignoli is also known for his communication skills, managing to speak to various audiences about the importance of the Cerrado, not just as a biome to be preserved but as a source of culinary and cultural inspiration. He sees in the Cerrado the potential to eradicate hunger in Brazil if utilized correctly, reflecting a vision that goes beyond the kitchen to issues of sustainability and regional development.
 
His unique approach combines academic research with culinary practice. He always seeks the origins of ingredients and techniques, which is reflected in his recipes, his work with local communities and companies, consultations, and cooking shows.
